Pumpkin Pie French Toast with Homemade Pumpkin Syrup

For the French Toast:

4 thick slices of brioche or challah bread

2 large eggs

1 cup whole milk

1/2 cup canned pumpkin puree

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon allspice

1 tablespoon brown sugar

A pinch of salt

Butter or oil for frying

For the Homemade Pumpkin Syrup:

1 cup maple syrup

1/2 cup canned pumpkin puree

1 teaspoon pumpkin pie spice

1/2 teaspoon vanilla extract

A pinch of salt

Prepare the Pumpkin Syrup: In a small saucepan over medium heat, combine the maple syrup, pumpkin puree, pumpkin pie spice, vanilla extract, and salt. Stir well and let it simmer for about 5-7 minutes until heated through. Remove from heat and set aside.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, pumpkin puree, vanilla extract, cinnamon, nutmeg, allspice, brown sugar, and a pinch of salt until smooth and well combined.

      Soak the Bread: Heat a skillet or griddle over medium heat and add a little butter or oil to coat the surface. Dip each slice of bread into the egg mixture, allowing it to soak for about 30 seconds on each side, ensuring it's well-coated.
