Ingredients
  

1 cup quinoa, rinsed

2 cups vegetable broth

1 cup diced cherry tomatoes

1 cup diced cucumbers

1 avocado, sliced

½ cup crumbled feta cheese (optional)

¼ cup chopped fresh parsley

¼ cup chopped fresh basil

2 tbsp olive oil

1 tbsp lemon juice

Salt and pepper to taste

Instructions
 

In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and let simmer for about 15 minutes or until the quinoa is fluffy and the broth has been absorbed. Remove from heat and allow to cool slightly.

    While the quinoa is cooling, prepare the dressing by whisking together the olive oil, lemon juice, salt, and pepper in a small bowl.

      In a large mixing bowl, combine the cooked quinoa, diced cherry tomatoes, cucumbers, chopped parsley, and basil.

        Drizzle the dressing over the quinoa mixture and gently toss to combine.

          Serve the quinoa mixture in bowls topped with sliced avocado and crumbled feta cheese, if using.
