Ingredients

1 cup semolina (sooji)

1 cup finely ground pistachios

1 cup sugar

1/2 cup plain yogurt

1/2 cup milk

1/2 cup vegetable oil

1 teaspoon baking powder

1/2 teaspoon cardamom powder

1/4 teaspoon salt

1/4 cup chopped pistachios (for garnish)

1 tablespoon rose water (optional)

A pinch of saffron threads (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the semolina, ground pistachios, baking powder, cardamom powder, and salt. Mix well and set aside.

Combine Wet Ingredients: In another bowl, whisk together the sugar, yogurt, milk, and vegetable oil until well combined. If using, stir in the rose water and saffron threads.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until everything is well incorporated. The batter should be thick but pourable.

Pour Into Pan: Pour the batter into the prepared cake pan and smooth the top with a spatula. Sprinkle chopped pistachios evenly over the surface for added crunch and garnish.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely before slicing. Serve it plain, or with a drizzle of honey or a dollop of whipped cream if desired.
