Ingredients

1 cup unsalted pistachios, shelled and roughly chopped

2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1 cup buttermilk

1/2 cup dried cranberries (optional for added flavor)

Zest of 1 orange (optional for a citrus twist)

Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

Cream butter and sugars: In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.

Add eggs and vanilla: Beat in the eggs one at a time, ensuring each is well incorporated before adding the next. Mix in the vanilla extract.

Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry mixture. Stir until just combined; avoid overmixing.

Fold in nuts and extras: Gently fold in the chopped pistachios, cranberries, and orange zest if using until evenly distributed throughout the batter.

Pour into the pan: Transfer the batter into the prepared loaf pan and spread it evenly.

Bake: Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean. If the top browns too quickly, tent it with aluminum foil.

Cool: Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
