1 cup all-purpose flour

1 cup ground pistachios (finely chopped)

1/2 cup granulated sugar

1/2 cup brown sugar

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup milk (or plant-based milk)

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup chopped pistachios, for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly with butter or cooking spray.

    Mix the Dry Ingredients: In a medium bowl, whisk together all-purpose flour, ground pistachios, baking powder, baking soda, and salt. Set aside.

      Cream the Butters and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy using an electric mixer.

        Add Eggs and Flavoring: Add the eggs one at a time, mixing well after each addition. Then, stir in the milk and vanilla extract until combined.
