Ingredients

1 lb chicken breast, cut into bite-sized pieces

1/2 cup cornstarch

1/2 cup all-purpose flour

1 tsp salt

1/2 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 cup vegetable oil (for frying)

1 cup red bell pepper, chopped

1 cup pineapple, diced

1/2 cup onion, sliced

1/4 cup green onion, chopped (for garnish)

For the SweetFire Sauce:

1/2 cup sugar

1/3 cup rice vinegar

2 tbsp soy sauce

1 tbsp chili paste (adjust to taste)

1 tsp garlic, minced

1 tsp ginger, minced

1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)

Instructions

Prepare the Chicken:

    - In a large mixing bowl, combine cornstarch, flour, salt, black pepper, garlic powder, and onion powder.

      - Add the chicken pieces to the dry mixture, ensuring each piece is well-coated with the flour blend.

        Fry the Chicken:

          - Heat vegetable oil in a large skillet or wok over medium-high heat.

            - Fry the coated chicken in batches until golden brown and cooked through, about 4-5 minutes per batch.

              - Remove from oil and drain on paper towels.

                Stir-Fry the Veggies:

                  - In a separate pan, sauté the chopped red bell pepper, diced pineapple, and sliced onion over medium heat until they are softened, about 3-4 minutes.

                    Make the Sauce:

                      - In a small saucepan, combine sugar, rice vinegar, soy sauce, chili paste, garlic, and ginger.

                        - Bring to a simmer over medium heat, stirring until sugar is dissolved.

                          - Stir in the cornstarch slurry and cook until the sauce thickens slightly, about 2 minutes.

                            Combine:

                              - Add the fried chicken to the sautéed vegetables. Pour the SweetFire sauce over everything and toss to coat evenly.

                                - Cook for an additional 2-3 minutes to heat through.

                                  Garnish and Serve:

                                    - Garnish with chopped green onions before serving.

                                      - Enjoy your SweetFire Chicken with steamed rice or noodles for a complete meal!
