1 lb boneless, skinless chicken breast, sliced into thin strips

2 cups fresh mushrooms, sliced (shiitake or button)

1 cup broccoli florets

1 red bell pepper, sliced

3 cloves garlic, minced

1/2 cup low-sodium soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 tablespoons vegetable oil

Salt and pepper to taste

Green onions, chopped (for garnish)

Cooked white rice (for serving)

Marinate the Chicken: In a bowl, combine the chicken strips with 2 tablespoons of soy sauce, cornstarch, and a pinch of salt and pepper. Let it marinate for at least 30 minutes.
