1 cup cornmeal (medium or coarse grind)

4 cups water or vegetable broth

2 tablespoons unsalted butter

1 cup grated Parmesan cheese (or more to taste)

1 teaspoon salt (adjust to taste)

Freshly ground black pepper (to taste)

Instructions
 

In a large pot, bring the water or vegetable broth to a boil over medium-high heat. Add the salt to the boiling liquid.

    Gradually whisk in the cornmeal, reducing the heat to low. Continue whisking until it thickens, about 2-3 minutes.

      Once thickened, reduce the heat to low and cover the pot, letting it cook for 30-40 minutes. Stir occasionally to prevent sticking.
