Overnight French Toast Casserole

Ingredients
  

1 loaf of brioche or challah bread, cut into 1-inch cubes

8 large eggs

2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1 cup fresh berries (strawberries, blueberries, or raspberries)

Powdered sugar, for dusting

Additional maple syrup, for serving

Prepare the Bread: In a large bowl, combine the cubed bread with the fresh berries. Gently toss to distribute the berries evenly among the bread. Place the mixture in a greased 9x13 inch baking dish.

    Make the Custard: In another large bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, maple syrup, vanilla extract, cinnamon, nutmeg (if using), and salt until well combined and slightly frothy.

      Combine: Pour the custard mixture evenly over the bread and berries, ensuring all pieces are well soaked. Use a spatula to gently press down on the bread as needed for it to absorb the liquid.

        Cover and Refrigerate: Cover the baking dish with plastic wrap or aluminum foil and refrigerate overnight, or for at least 6 hours to allow the flavors to meld and the bread to soak up the custard.

          Preheat Oven: The next morning, preheat your oven to 350°F (175°C).

            Bake: Remove the cover from the dish and bake the casserole for 45-55 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean. If it starts to brown too quickly, loosely cover with foil.

              Serve: Let it cool for a few minutes before slicing. Lightly dust with powdered sugar and serve warm with extra maple syrup drizzled on top.
