Ingredients
  

4 cups fresh mixed greens (arugula, spinach, and baby kale)

2 large oranges, segmented and juiced

1 cup of creamy Greek yogurt

1 tablespoon honey

1 teaspoon vanilla extract

1/2 cup sliced almonds, toasted

1/2 cup shredded coconut, unsweetened

1/4 cup crumbled feta cheese (optional)

Salt and pepper to taste

Fresh mint leaves for garnish

Prepare the dressing: In a medium bowl, combine the Greek yogurt, the juice of one orange, honey, and vanilla extract. Whisk until smooth and creamy. Season with salt and pepper to taste. If you want a thinner consistency, add a little water or more orange juice.

    Segment the oranges: Cut the remaining two oranges into segments by slicing off the peel and pith. Using a sharp knife, cut along the membranes to release the orange segments. Set aside.
