2 cups basmati rice

500g lamb, cut into small cubes

1 large onion, finely chopped

4 cloves garlic, minced

1 tsp ground cinnamon

1 tsp ground cumin

1/2 tsp ground cardamom

1/2 tsp black pepper

1/2 tsp turmeric

1/4 tsp salt (adjust to taste)

1 cup mixed nuts (pine nuts, almonds, pistachios), lightly toasted

1 cup raisins or dried apricots, chopped

4 cups chicken or vegetable broth

3 tablespoons olive oil

2 fresh bay leaves

1/2 cup fresh parsley, chopped (for garnish)

1/2 cup pomegranate seeds (for garnish, optional)

Instructions
 

Marinate the Meat: In a bowl, combine lamb cubes with minced garlic, cinnamon, cumin, cardamom, black pepper, turmeric, and salt. Let marinate for at least 30 minutes.

    Sauté the Onions: Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent (about 5 minutes).

      Brown the Meat: Add the marinated lamb to the pot. Cook until browned on all sides, about 10 minutes.

        Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.

          Combine Ingredients: Stir in the mixed nuts and raisins. Add the rinsed rice to the pot, mixing well to combine with the lamb and onion mixture.

            Add Broth: Pour the chicken or vegetable broth into the pot. Add bay leaves and bring the mixture to a gentle boil.

              Cook the Rice: Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes or until the rice is tender and absorbs all liquid. Avoid lifting the lid during this time.

                Fluff and Serve: Once cooked, remove the pot from heat. Let it sit covered for an additional 10 minutes. Fluff the rice gently with a fork.
