Ingredients
  

2 salmon fillets (about 6 oz each)

1 cup orzo pasta

2 cups vegetable or chicken broth

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, diced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

Zest and juice of 1 lemon

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
