One-Pan Honey BBQ Chicken Rice

2 cups jasmine rice

1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces

1 cup BBQ sauce (your favorite brand)

1/4 cup honey

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup bell peppers (mixed colors), diced

1 cup frozen peas

2 tbsp olive oil

1 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Chicken Marinade: In a bowl, combine the BBQ sauce and honey, then add the chicken pieces, stirring well to coat. Allow it to marinate for at least 20 minutes (or up to overnight in the fridge for deeper flavor).

    Sauté Aromatics: In a large, deep skillet or a frying pan, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté for about 3-4 minutes until the onions are translucent and the garlic is fragrant.

      Cook the Chicken: Add the marinated chicken (with the BBQ sauce mixture) to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

        Add the Rice: Stir in the jasmine rice, smoked paprika, salt, and pepper. Mix until the rice is coated in the remaining BBQ sauce.
