1 can (20 oz) crushed pineapple in juice, drained

1 package (8 oz) cream cheese, softened

1 cup powdered sugar

1 cup whipped cream (or cool whip)

1 cup crushed graham crackers (about 1 ½ cups if using whole)

1/2 cup unsalted butter, melted

1 tsp vanilla extract

Fresh pineapple chunks and mint leaves for garnish (optional)
