For the crust:

1 ½ cups graham cracker crumbs

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

For the filling:

1 (8 oz) package cream cheese, softened

1 cup sweetened condensed milk

1/2 cup fresh key lime juice (or regular lime juice)

1 tablespoon lime zest

1 teaspoon vanilla extract

1 cup heavy whipping cream

For garnish:

Lime slices

Whipped cream

Additional lime zest (optional)

Instructions
 

Make the Crust:

    - In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand.

      - Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Use the back of a measuring cup or your fingers to ensure it's evenly packed.

        - Place the crust in the refrigerator to chill while preparing the filling.

          Prepare the Filling:

            - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add the sweetened condensed milk, mixing until well combined and smooth.

                - Slowly add in the fresh key lime juice, lime zest, and vanilla extract, mixing until fully incorporated.

                  Whip the Cream:

                    - In a separate bowl, whip the heavy whipping cream until soft peaks form. Be careful not to over-whip.

                      - Gently fold the whipped cream into the key lime mixture until no white streaks remain. Be careful to keep the mixture light and airy.

                        Combine and Chill:

                          - Pour the filling into the prepared graham cracker crust, smoothing it out with a spatula.

                            - Cover the pie with plastic wrap and refrigerate for at least 4 hours or until set. For best results, let it chill overnight.

                              Serve:

                                - Once set, slice the pie and garnish with whipped cream, lime slices, and additional lime zest if desired.
