Mushroom and Rice Bake

2 cups jasmine rice, rinsed and drained

1 lb mushrooms (cremini or button), sliced

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream

1 cup grated parmesan cheese (plus extra for topping)

2 tbsp olive oil

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Add the minced garlic and sliced mushrooms to the skillet. Cook for an additional 7-8 minutes, or until the mushrooms are tender and any moisture has evaporated.

        Stir in the dried thyme, dried rosemary, salt, and pepper. Mix well and remove from heat.

          In a large bowl, combine the rinsed rice, mushroom mixture, vegetable broth, and heavy cream. Stir until well mixed.

            Transfer the mixture to a greased 9x13-inch baking dish, spreading it evenly. Sprinkle the top with grated parmesan cheese.

              Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                Remove the foil and bake for an additional 15-20 minutes, or until the rice is cooked and the top is golden brown.

                  Once baked, let it rest for about 10 minutes before serving. Garnish with fresh parsley before serving.
