Ingredients
  

3 large eggs

1/4 cup fresh mozzarella cheese, diced

2 tablespoons milk

1 tablespoon fresh basil, chopped

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup cherry tomatoes, halved (optional)

1 tablespoon grated Parmesan cheese (optional)

Instructions
 

In a bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.

    Add the fresh basil to the egg mixture and mix gently.

      Heat olive oil in a non-stick skillet over medium heat until shimmering.

        Pour the egg mixture into the skillet, swirling to ensure even coverage.

          Cook for about 2-3 minutes or until the edges start to set.

            Sprinkle the diced mozzarella cheese (and cherry tomatoes, if using) over one half of the omelet.

              Carefully fold the other half of the omelet over the cheese and tomatoes using a spatula.

                Cook for an additional 2 minutes until the cheese melts and the eggs are cooked through but still tender.

                  Transfer the omelet to a plate and sprinkle with grated Parmesan cheese, if desired.

                    Serve hot, garnished with additional fresh basil if you like.
