2 ½ cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

1 tsp salt

2 tsp ground cinnamon

1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs

1 tbsp vanilla extract

1 cup buttermilk

1 cup packed brown sugar

1 tsp ground ginger

1 tsp ground nutmeg

1 cup chopped pecans or walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans and set aside.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      Cream Butter and Sugars: In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.

        Add Eggs and Vanilla: Beat in the eggs, one at a time, making sure to mix well after each addition. Then add vanilla extract and mix until well incorporated.

          Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined.

            Add Spice and Nuts: Fold in the ground ginger, ground nutmeg, and chopped nuts if using.

              Pour and Bake: Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Cool the Cakes: Allow the cakes to cool in the pans for about 10 minutes before transferring to wire racks to cool completely.

                  Prepare the Frosting (optional): For a delightful finish, you can make a cream cheese frosting or simply dust the cooled cake with powdered sugar.

                    Layer and Serve: Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of frosting (if using) on top, then place the second layer on top and repeat. Finish with the third layer.
