Middle Eastern Flatbread

2 cups all-purpose flour

1 cup whole wheat flour

1 teaspoon sea salt

1 tablespoon sugar

2 teaspoons instant yeast

1 tablespoon olive oil

1 cup warm water (approximately 110°F or 43°C)

Sesame seeds (optional, for garnish)

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sea salt, sugar, and instant yeast. Whisk them together until evenly distributed.

    Combine Wet Ingredients: In a separate bowl, mix the warm water and olive oil. Make sure the water is warm but not hot to ensure it activates the yeast without killing it.

      Form the Dough: Make a well in the center of the dry ingredient mixture. Pour in the wet mixture and begin to stir with a wooden spoon until a rough dough forms.

        Knead the Dough: Turn the dough out onto a floured surface. Knead for about 10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.

          Let it Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

            Prep for Baking: Once risen, punch down the dough to release the air. Divide it into 8 equal portions and shape each portion into a ball. Cover the balls with a damp cloth and let them rest for about 15-20 minutes.

              Roll Out: Preheat a griddle or skillet over medium-high heat. Take one ball of dough and roll it out on a floured surface into a round circle (about 6 inches in diameter). If you want a bit of crunch, sprinkle some sesame seeds on the dough before rolling.

                Cook the Flatbread: Place the rolled dough onto the preheated griddle. Cook for about 2 minutes on each side, or until the flatbread puffs up and develops golden spots. Continue with the remaining dough.

                  Final Touches: Brush each flatbread with a little olive oil after cooking for extra flavor and softness. Keep the flatbreads covered in a kitchen towel to keep them warm and soft while you finish cooking the rest.
