Ingredients
  

1 package (250g) phyllo pastry

1 cup unsalted butter, melted

2 cups ricotta cheese or Nabulsi cheese (drained)

1 cup semolina

1 cup sugar

2 tsp vanilla extract

1 tsp ground cinnamon

1 cup milk

1/2 cup chopped nuts (pistachios or almonds)

1/2 cup honey

Water (as needed)

Instructions
 

Prepare the Filling: In a mixing bowl, combine ricotta cheese (or Nabulsi), semolina, sugar, vanilla extract, ground cinnamon, and milk. Mix until smooth and well combined. If too thick, add a little water to reach a spreadable consistency. Fold in chopped nuts.

    Prepare the Phyllo Pastry: Preheat your oven to 350°F (175°C). Unroll the phyllo pastry and cover with a damp towel to prevent it from drying out. Take two sheets of phyllo together and brush with melted butter. Repeat until you have about 10 layers stacked.

      Add the Filling: Spread a generous layer of the prepared filling along one edge of the phyllo stack. Roll the phyllo tightly to form a log shape, making sure to keep it tight and secure.

        Shape the Rolls: Once the log is formed, you can coil it into circular shapes or leave it straight. Place the rolled pastry on a greased baking sheet. Repeat the process with the remaining phyllo and filling.

          Brush with Butter: Once all the rolls are formed, brush the tops with remaining melted butter to get a golden and crispy layer when baked.

            Baking: Bake in the preheated oven for about 25-30 minutes, or until the rolls are golden brown and crispy.

              Prepare the Syrup: While the rolls are baking, prepare the honey syrup. In a small saucepan, heat honey over low heat until warm. You can add a splash of water or a dash of lemon juice for added flavor. Heat until just mixed, then remove from heat.

                Serving: Once the rolls are done, remove from the oven and allow them to cool slightly. Drizzle the warm honey syrup over the rolls while they are still warm.

                  Garnish and Enjoy: You can garnish with additional chopped nuts and a sprinkle of cinnamon if desired. Serve warm or at room temperature and enjoy this decadent Middle Eastern delight!
