Mediterranean Steak Bowls

Ingredients
  

1 lb flank steak or sirloin, sliced against the grain

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

1 cup cooked quinoa or couscous

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

½ cup crumbled feta cheese

1 cup chickpeas, drained and rinsed

Fresh parsley, chopped (for garnish)

For the Tzatziki Sauce:

1 cup plain Greek yogurt

1 cup cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

Salt and pepper to taste

Marinate the Steak: In a bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper. Add the sliced steak and toss to coat. Let it marinate for at least 30 minutes at room temperature (or up to 2 hours in the fridge).

    Prepare the Tzatziki Sauce: In a separate bowl, mix the Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper. Refrigerate to let the flavors meld while you cook the steak.

      Cook the Steak: Preheat a grill or skillet over medium-high heat. Add the marinated steak slices and cook for about 3-4 minutes per side, or until desired doneness is achieved. Remove from heat and let rest for a couple of minutes.

        Assemble the Bowls: In individual serving bowls, start with a base of quinoa or couscous. Top with the cooked steak, cherry tomatoes, diced cucumber, sliced red onion, chickpeas, and crumbled feta cheese.

          Drizzle and Serve: Generously drizzle the tzatziki sauce over each bowl, garnish with fresh parsley, and season with additional salt and pepper if desired.
