Mediterranean Rice Pilaf; With Nuts And Dried Fruit

Ingredients
  

1 cup long-grain basmati rice

2 cups vegetable broth

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup slivered almonds

1/2 cup walnuts, chopped

1/2 cup mixed dried fruit (such as apricots, raisins, and cranberries)

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Instructions
 

Begin by rinsing the basmati rice under cold water until the water runs clear. This helps to remove excess starch and ensures fluffy rice.

    In a medium saucepan, heat the vegetable broth over medium heat and bring to a simmer.

      In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

        Stir in the minced garlic, cumin, cinnamon, and nutmeg. Cook for another 1-2 minutes, allowing the spices to release their aromas.

          Add the rinsed rice to the skillet and sauté, stirring frequently, for about 2-3 minutes until the rice is slightly toasted.

            Pour the hot vegetable broth over the rice. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice has absorbed all the liquid.

              While the rice cooks, toast the slivered almonds and chopped walnuts in a separate pan over low heat for about 5 minutes until golden and fragrant. Be careful not to burn them.

                After the rice is cooked, remove it from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork, then stir in the toasted nuts, dried fruit, and chopped parsley.

                  Season with salt and pepper to taste. Serve warm as a side dish or a light main course.
