Mediterranean Grilled Cheese Sandwich

Ingredients
  

4 slices of sourdough bread

1 cup feta cheese, crumbled

1 cup mozzarella cheese, shredded

1 small jar of roasted red peppers, drained and sliced

1/2 cup kalamata olives, pitted and chopped

1/4 cup sun-dried tomatoes, chopped

2 tablespoons fresh basil, chopped

2 tablespoons olive oil

Salt and pepper to taste

Optional: 1 teaspoon garlic powder

Prepare the Filling: In a mixing bowl, combine the crumbled feta, shredded mozzarella, roasted red peppers, chopped olives, sun-dried tomatoes, and fresh basil. Season with salt, pepper, and garlic powder if using. Mix well until all ingredients are evenly combined.

    Assemble the Sandwiches: Lay out 2 slices of sourdough bread on a clean surface. Generously spoon the Mediterranean cheese mixture onto each slice. Top each with the remaining slices of sourdough to form two sandwiches.

      Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

        Grill the Sandwiches: Place the sandwiches in the skillet. Cook for about 3-4 minutes on one side, or until golden brown and crispy. Carefully flip the sandwiches, adding the remaining olive oil if needed, and continue cooking for another 3-4 minutes until the other side is golden and the cheese is melted.
