Ingredients

2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon chopped fresh basil (plus more for garnish)

8 oz fettuccine pasta

Crushed red pepper flakes (optional)

Instructions

Season the chicken breasts with salt and pepper on both sides.

In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

Add the cherry tomatoes to the skillet and cook until they start to blister, about 3-4 minutes.

Lower the heat and pour in the heavy cream, stirring well to combine.

Gradually add the grated Parmesan cheese and Italian seasoning, mixing until the sauce is smooth and creamy.

Slice the cooked chicken and return it to the skillet along with the chopped basil. Stir to coat the chicken in the sauce.

Meanwhile, cook the fettuccine pasta according to package instructions. Drain and add to the skillet with the sauce, tossing everything together until well combined.

If desired, sprinkle red pepper flakes for an extra kick.

Serve the pasta hot, garnished with additional fresh basil and more Parmesan cheese.
