2 cups all-purpose flour

1/2 teaspoon active dry yeast

1 teaspoon sugar

1/2 teaspoon salt

3/4 cup warm water (about 110°F)

1/4 cup olive oil (plus extra for brushing)

1/4 cup zaatar spice mix

1/4 cup warm water (for mixing zaatar)

2 tablespoons sesame seeds (optional)

1 pinch of salt (for the zaatar mix)

Instructions
 

Prepare the Dough: In a mixing bowl, combine the warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.

    In a large bowl, mix together the flour and salt. Once the yeast mixture is ready, add it to the flour along with the olive oil.

      Mix until a sticky dough forms. Knead on a floured surface for about 5-7 minutes until the dough is smooth and elastic.

        Place the dough in a lightly oiled bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm place for 1 hour or until it doubles in size.

          Prepare the Zaatar Mix: In a small bowl, combine the zaatar spice mix, warm water, and a pinch of salt. Mix well to create a paste-like consistency. Add sesame seeds if desired.

            Shape the Manakeesh: Once the dough has risen, punch it down and divide it into 4 equal balls. On a floured surface, roll out each ball into a flat circle about 1/4 inch thick.

              Preheat your oven to 475°F (245°C). Place the rolled dough rounds onto a baking sheet lined with parchment paper.

                Top the Dough: Spread a generous amount of the zaatar mixture onto each round, leaving a small border around the edges. Brush the edges with olive oil.

                  Bake: Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown.

                    Serve: Remove from the oven and let cool slightly. Cut into wedges and enjoy warm with additional olive oil for dipping if desired!
