Ingredients
  

For the Maftoul:

2 cups whole wheat maftoul (or couscous)

2 tablespoons olive oil

1 teaspoon salt

2 cups vegetable broth (or water)

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

For the Spiced Chickpeas:

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper

1/2 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, for garnish

For the Vegetable Medley:

1 medium zucchini, diced

1 red bell pepper, diced

1 small onion, diced

2 tablespoons olive oil

Salt and pepper, to taste

Juice of 1 lemon

Instructions
 

Prepare the Maftoul:

    - In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the maftoul and toast it lightly for 2-3 minutes until it becomes fragrant.

      - Stir in the salt, cumin, and coriander, mixing well.

        - Pour in the vegetable broth (or water) and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until all the liquid is absorbed and the maftoul is tender. Fluff with a fork and set aside.

          Cook the Spiced Chickpeas:

            - While the maftoul is cooking, preheat your oven to 400°F (200°C).

              - In a mixing bowl, combine chickpeas, olive oil, smoked paprika, cayenne, garlic powder, salt, and pepper. Toss well to coat evenly.

                - Spread the chickpeas on a baking sheet in a single layer. Roast in the oven for 25-30 minutes, or until crispy and golden, stirring halfway through.

                  Sauté the Vegetable Medley:

                    - In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced onion and sauté for 2 minutes until it starts to become translucent.

                      - Add the zucchini and red bell pepper to the skillet, cooking for an additional 5-7 minutes until the vegetables are tender. Season with salt, pepper, and lemon juice.

                        Assemble the Dish:

                          - In a large serving bowl, combine the cooked maftoul with the sautéed vegetables. Gently fold in the roasted spiced chickpeas.

                            - Garnish with fresh parsley and a drizzle of olive oil if desired.
