Ingredients
  

8 large eggs

1 cup egg whites

1 cup black beans, drained and rinsed

1 cup chopped bell peppers (red, green, or yellow)

1 cup chopped fresh spinach

1/2 cup diced red onion

1 cup cooked and crumbled turkey sausage or chicken sausage

1/2 cup shredded low-fat cheddar cheese

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper, to taste

8 whole wheat tortillas

Optional toppings: salsa, avocado slices, Greek yogurt

Instructions
 

Preheat your oven to 350°F (175°C) and line a large rimmed baking sheet with parchment paper.

    In a large mixing bowl, whisk together the whole eggs and egg whites until well combined. Season with salt, pepper, garlic powder, smoked paprika, and cumin.

      In a medium-sized skillet, heat the olive oil over medium heat. Sauté the red onion and bell peppers until softened, about 5 minutes. Add the spinach and turkey sausage, cooking for another 2-3 minutes until the spinach wilts. Remove from heat and let cool slightly.

        Spread the sautéed mixture evenly over the prepared baking sheet. Pour the egg mixture on top, making sure everything is evenly distributed.

          Sprinkle the black beans and shredded cheddar cheese on top of the egg mixture.

            Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the top is lightly golden.

              Once baked, let it cool slightly. Cut the sheet pan egg mixture into 8 squares.

                Lay a tortilla flat, and place one square of the egg mixture in the center. Roll it up, folding in the sides as you go to create a burrito. Repeat for the remaining squares and tortillas.

                  Serve warm with optional toppings like salsa, avocado slices, or a dollop of Greek yogurt.
