Lemon Vinaigrette Dressing

Ingredients
  

1/4 cup fresh lemon juice

1/2 cup extra virgin olive oil

1 tbsp Dijon mustard

1 clove garlic, minced

1 tsp honey or maple syrup (optional for sweetness)

Salt and pepper to taste

1 tsp fresh thyme or parsley, finely chopped (optional)

Instructions
 

In a small mixing bowl, combine the fresh lemon juice, Dijon mustard, and minced garlic. Whisk together until well blended.

    Slowly drizzle in the extra virgin olive oil while whisking continuously to emulsify the mixture and create a smooth dressing.

      If you prefer a hint of sweetness, add the honey or maple syrup and whisk until fully incorporated.

        Season the vinaigrette with salt and pepper to taste, adjusting according to your preference.

          For added flavor, stir in the chopped fresh thyme or parsley.

            Taste and adjust any seasoning or acidity, if necessary. You can add more lemon juice for tanginess or more honey for sweetness.

              Transfer the vinaigrette to a jar or airtight container. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
