Lemon Garlic Shrimp Pasta With Spinach

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

3 cups fresh spinach

4 cloves garlic, minced

1 lemon (zested and juiced)

1/4 cup olive oil

1/4 cup white wine (or chicken broth)

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes. Be careful not to burn it.

      Cook the Shrimp: Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes on each side, or until they turn pink and opaque.

        Add the Spinach and Wine: Stir in the spinach, white wine, lemon juice, and half of the lemon zest. Allow the spinach to wilt for about 2 minutes.

          Combine Pasta and Sauce: Add the reserved pasta water to the skillet. Then, gently toss in the cooked spaghetti until well-coated with the sauce. If the pasta seems dry, add a bit more pasta water.

            Finish with Flavor: Stir in the grated Parmesan cheese and the remaining lemon zest. Adjust the seasoning with salt and pepper to taste.

              Serve: Plate the pasta, garnishing with chopped parsley and extra Parmesan, if desired. Enjoy your zesty delight!
