Lemon Dill Chicken

Ingredients
  

4 boneless, skinless chicken breasts

Zest and juice of 2 large lemons

3 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon honey

Salt and pepper, to taste

1 cup chicken broth

Optional: Lemon slices and dill sprigs for garnish

Instructions
 

In a mixing bowl, whisk together the lemon juice, lemon zest, minced garlic, dill, honey, olive oil, salt, and pepper to create a marinade.

    Place the chicken breasts in a resealable plastic bag or shallow dish, and pour the marinade over the chicken. Seal the bag or cover the dish, then refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

      Preheat your oven to 400°F (200°C).

        Remove the chicken from the marinade, allowing the excess to drip off, and place them in a baking dish. Pour the chicken broth around the chicken to keep it moist during cooking.

          Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.

            Optional: Broil for an additional 2-3 minutes for a nice golden color on top.

              Once done, let the chicken rest for 5 minutes, then slice and serve with lemon slices and fresh dill sprigs for garnish if desired. Enjoy with your favorite sides!
