For the Cookie Base:

1 cup unsalted butter, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Lemon Layer:

4 large eggs

1 1/2 cups granulated sugar

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 2 lemons

1/4 cup all-purpose flour

1/2 teaspoon baking powder

Powdered sugar for dusting

1/2 cup fresh blueberries (or raspberries)

1 tablespoon lemon zest (for garnish)

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or line it with parchment paper for easy removal.

    Prepare the Cookie Base:

      - In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

        - Add in the vanilla extract, mixing well.

          - Gradually incorporate 2 cups of all-purpose flour, salt, and baking powder until a soft dough forms.

            - Press the dough evenly into the bottom of the prepared baking dish, creating a compact layer.

              Bake the Base:

                - Bake the cookie base in the preheated oven for about 15 minutes, or until it's lightly golden. Remove from the oven and let it cool slightly while you prepare the lemon layer.

                  Make the Lemon Layer:

                    - In a large bowl, whisk together the eggs and granulated sugar until well combined.

                      - Add the fresh lemon juice, lemon zest, flour, and baking powder. Whisk until smooth and well incorporated.
