Ingredients
  

2 cups basmati rice

4 cups chicken or vegetable broth

1 medium onion, finely chopped

2 garlic cloves, minced

1/4 cup slivered almonds

1/4 cup pine nuts

2 tablespoons olive oil

1 teaspoon cumin powder

1/2 teaspoon cinnamon

1/2 teaspoon allspice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

      Add the minced garlic to the pot and stir for an additional minute until fragrant.

        Incorporate the slivered almonds and pine nuts into the pot, stirring frequently until golden brown, being careful not to burn them.

          Add the soaked and drained rice to the pot, stirring to coat the rice with the oil and mix in the onions and nuts.

            Sprinkle in the cumin, cinnamon, and allspice. Season with salt and pepper to taste, stirring well to combine.

              Pour in the chicken or vegetable broth and bring it to a boil. Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for 15-20 minutes, or until the rice is cooked and has absorbed the liquid.

                After the rice is cooked, remove the pot from heat and let it sit, covered, for an additional 5 minutes.

                  Fluff the rice gently with a fork and transfer it to a serving dish. Garnish with fresh parsley before serving.
