1 cup brown lentils

1/2 cup long-grain rice (like basmati or jasmine)

3 large onions, thinly sliced

1/4 cup olive oil

1 teaspoon cumin powder

1 teaspoon coriander powder

1/2 teaspoon allspice (or cinnamon)

Salt and pepper to taste

4 cups water or vegetable broth

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Lentils: Rinse the lentils under cold water. In a medium pot, combine lentils and 4 cups of water or broth. Bring to a boil, then reduce heat and simmer uncovered for about 15-20 minutes, until they are tender but not mushy. Drain and set aside.

    Prepare the Rice: In a separate pot, rinse the rice until the water runs clear. Add the rice to the pot with the drained lentils. Stir in cumin, coriander, allspice, salt, and pepper. Pour in 2 cups of water or broth (adjust based on rice package instructions) and bring to a boil. After boiling, reduce to low heat, cover, and cook for about 15 minutes until the rice absorbs the liquid and is fluffy. Remove from heat and let it sit covered for another 5 minutes.

      Caramelize the Onions: While the lentils and rice are cooking, heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring frequently, until they become deep golden brown and caramelized; this could take 15-20 minutes. Season with a pinch of salt to enhance the caramelization.

        Combine: Gently fold the cooked lentils into the rice mixture, then transfer it to the skillet with the caramelized onions. Stir until everything is well combined and heated through.

          Serve: Transfer the Mujadara to a serving platter and top with the remaining caramelized onions. Garnish with fresh parsley and serve with lemon wedges on the side for a zesty touch.
