Ingredients
  

2 cups whole milk

1 cup heavy cream

1 cup sugar

1 teaspoon mastic resin (ground into a powder)

2 tablespoons cornstarch

1/2 cup water

1/4 cup rose water or orange blossom water

1/2 cup pistachios (chopped, for garnish)

Additional mastic resin (optional, for texture)

Instructions
 

In a medium saucepan, combine the milk, heavy cream, and sugar. Heat over medium-low heat, stirring until the sugar dissolves. Do not let it boil.

    In a separate small bowl, combine the cornstarch with the water to create a slurry. Add this mixture to the milk mixture while constantly stirring, cooking for an additional 2-3 minutes until the mixture thickens slightly. Remove from heat.

      Stir in the ground mastic resin and rose water (or orange blossom water). Mix well. Allow the mixture to cool to room temperature.

        Once cooled, transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency, usually about 20-25 minutes.

          For a firmer texture, transfer the churned Booza to an airtight container, smooth the top, and freeze for at least 4 hours or until firm.

            To serve, scoop the Booza into bowls and sprinkle with chopped pistachios. For a traditional touch, you can use a wooden stick to pull and stretch the ice cream before serving.
