Kung Pao Chicken Noodles

8 oz egg noodles

1 lb boneless chicken breast, diced

2 tbsp soy sauce

2 tbsp rice vinegar

2 tbsp szechuan sauce (or chili garlic sauce)

1 tbsp cornstarch

2 tbsp vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1 red bell pepper, diced

1 green bell pepper, diced

1 cup unsalted roasted peanuts

4 green onions, chopped

½ cup unsalted chicken broth

Salt and pepper to taste

Sesame seeds for garnish (optional)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Marinate the Chicken: In a bowl, combine the diced chicken with soy sauce, rice vinegar, szechuan sauce, and cornstarch. Mix well and let it marinate for 15 minutes.

      Prepare the Stir-Fry: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes.

        Add Aromatics: Add minced garlic and grated ginger to the chicken, stir-frying for another minute until fragrant.

          Incorporate Vegetables: Add the diced red and green bell peppers, and continue to stir-fry for 3-4 minutes or until the peppers are tender-crisp.
