250g kunafa pastry (shredded phyllo dough)

150g unsalted butter, melted

200g ricotta cheese

200g unsalted mozzarella cheese, grated

100g sugar

1 cup milk

1/2 cup water

1 tsp vanilla extract

1/2 tsp rose water (optional)

1/4 cup crushed pistachios (for topping)

Honey or sugar syrup, for drizzling

Instructions
 

Prepare the Pastry: Preheat your oven to 180°C (350°F). In a large bowl, toss the kunafa pastry with the melted butter until evenly coated.

    Layer the Bottom: Take half of the coated kunafa and press it into the bottom of a greased round baking dish (about 9 inches). Make sure it's compact and even.

      Make the Cheese Filling: In a separate bowl, mix the ricotta cheese, mozzarella cheese, sugar, milk, vanilla extract, and rose water (if using) until well combined and smooth. Spread this mixture evenly over the kunafa base in the baking dish.

        Top with Pastry: Layer the remaining kunafa on top of the cheese filling, again pressing down gently to ensure it holds together.

          Bake to Perfection: Place in the preheated oven and bake for about 30-40 minutes or until the top is golden brown and crisp.

            Prepare the Syrup: While the kunafa bakes, combine 1/2 cup water with 100g sugar in a small saucepan. Bring to a boil, then reduce heat and let it simmer for about 5 minutes. Remove from heat and let it cool.

              Drizzle and Garnish: Once the kunafa is baked, remove it from the oven and immediately drizzle the cooled syrup over the top. Allow it to soak for about 10 minutes.

                Serve: Garnish with crushed pistachios for an added crunch, slice it into wedges, and serve warm, drizzling additional honey or syrup if desired.
