Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/2 cup breadcrumbs

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 tablespoon grated ginger

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon gochujang (Korean chili paste)

1 tablespoon brown sugar

1 egg, beaten

1 teaspoon black pepper

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1 tablespoon gochujang

1 teaspoon sesame oil

1 teaspoon lime juice

1/2 teaspoon garlic powder

Salt, to taste

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, green onions, minced garlic, grated ginger, soy sauce, sesame oil, gochujang, brown sugar, beaten egg, and black pepper. Mix until all ingredients are well combined, but be careful not to overmix.

      Form the Meatballs: Using your hands, shape the mixture into small meatballs, about 1 inch in diameter. Place them evenly on the prepared baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and lightly golden on the outside. You can turn them halfway through for even cooking.

          Prepare the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip by combining the mayonnaise, gochujang, sesame oil, lime juice, and garlic powder in a small bowl. Mix well and season with salt to taste.

            Serve: Once the meatballs are done, remove them from the oven and let them cool slightly. Serve the meatballs warm on a platter with the spicy mayo dip on the side for dipping.
