12 oz penne pasta

1 lb Italian sausage (mild or spicy, your preference)

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (cremini or button)

1 medium onion, diced

3 cloves garlic, minced

24 oz marinara sauce (homemade or store-bought)

1 tsp dried Italian herbs (oregano, basil, thyme)

1/4 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

1/2 cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente (usually about 8-10 minutes). Drain and set aside, reserving 1/2 cup of pasta water.

    Brown the Sausage: In a large skillet over medium heat, add the olive oil. Once heated, remove the casing from the Italian sausage and crumble it into the pan. Cook, stirring occasionally, until browned and cooked through (about 5-7 minutes). Use a slotted spoon to remove the sausage and set aside, leaving the drippings in the pan.

      Sauté the Vegetables: In the same skillet, add the diced onion and cook for about 2-3 minutes until translucent. Then, add the garlic and sliced mushrooms, cooking for an additional 3-5 minutes until the mushrooms are tender.

        Add Spinach and Marinara: Stir in the chopped spinach, cooking until wilted (about 2 minutes). Then pour in the marinara sauce, dried Italian herbs, and red pepper flakes. Season with salt and pepper to taste. Let this simmer gently for about 5 minutes to blend the flavors.

          Combine Pasta and Sauce: Return the cooked sausage to the skillet, then add the drained pasta. Toss everything together, adding reserved pasta water as needed to loosen the sauce. Cook for another 2-3 minutes until heated through and well combined.

            Serve: Plate the pasta and top with grated Parmesan cheese. Garnish with fresh basil leaves and additional Parmesan if desired.
