2 ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

3 large eggs

3 tablespoons unsalted butter, melted

2 teaspoons anise extract

1 tablespoon anise seeds

Zest of 1 lemon

¼ cup sliced almonds (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, beat the eggs and then add the melted butter, anise extract, and lemon zest, mixing until smooth.

        Combine the Mixtures: Gradually add the wet mixture to the dry ingredients. Stir until a dough forms. If desired, fold in the anise seeds and sliced almonds for extra texture.

          Shape the Dough: Divide the dough into two equal portions. With lightly floured hands, shape each portion into a log approximately 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, leaving space between them for spreading.

              Cool and Slice: Remove from the oven and let the logs cool on the baking sheet for about 10 minutes. Then transfer them to a cutting board, and using a serrated knife, slice the logs diagonally into ½-inch thick cookies.
