1/2 cup brown sugar, packed

1 tablespoon baking powder

1/2 cup unsalted butter, melted

2 large eggs

1 cup buttermilk (or milk with 1 tablespoon vinegar)

2 cups peeled, diced apples (such as Granny Smith or Honeycrisp)

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

Extra cinnamon sugar for topping (1 tablespoon sugar mixed with 1/2 teaspoon cinnamon)

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the pan lightly.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

      Combine Wet Ingredients: In a separate bowl, mix the melted butter, eggs, buttermilk, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

          Fold in Apples and Nuts: Gently fold in the diced apples and chopped nuts (if using) until evenly distributed throughout the batter.
