1 cup granulated sugar

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

2 large eggs

¾ cup unsweetened applesauce

½ cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

2 cups peeled, diced apples (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

1 tablespoon brown sugar (for topping)

1 teaspoon cinnamon (for topping)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking soda, baking powder, cinnamon, nutmeg, and salt until well combined.

      Mix Wet Ingredients: In another bowl, combine the eggs, applesauce, vegetable oil, and vanilla extract. Whisk until the mixture is smooth and well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined – be careful not to overmix. It’s okay if the batter is slightly lumpy.

          Add Apples and Nuts: Fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.
