Ingredients

2 cups rolled oats

2 ripe bananas, mashed

2 cups unsweetened almond milk (or any milk of your choice)

2 large apples, peeled, cored, and diced (about 2 cups)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Mix well to ensure everything is evenly distributed.

Combine Wet Ingredients: In another bowl, combine the mashed bananas, almond milk, honey (or maple syrup), and vanilla extract. Whisk until smooth and well-blended.

Incorporate Apples: Gently fold the diced apples into the wet ingredient mixture.

Combine Everything: Pour the wet mixture into the dry ingredients and mix until just combined. If using nuts and raisins/cranberries, stir them in at this stage.

Transfer to Baking Dish: Spread the mixture evenly in the prepared baking dish.

Bake: Bake in the preheated oven for about 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the bake to cool for a few minutes before slicing. Serve warm, and top with additional fruit, yogurt, or a drizzle of honey if desired.
