Ingredients

2 cups apple cider

1 cup all-purpose flour

1 cup whole wheat flour

1 cup granulated sugar

1/2 cup packed brown sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1/2 teaspoon salt

2 large eggs

1/2 cup unsweetened applesauce

1/4 cup vegetable oil

1 teaspoon vanilla extract

1/4 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions

Reduce Apple Cider: In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat to medium-low and let it simmer until reduced to about 1/2 cup, approximately 20-25 minutes. Remove from heat and let cool slightly.

Preheat Oven: Preheat your oven to 350°F (175°C). Prepare a donut pan by greasing it lightly with cooking spray or oil.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the eggs, reduced apple cider, applesauce, vegetable oil, and vanilla extract until smooth.

Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; it's okay if the batter is a little lumpy.

Fill Donut Pan: Spoon or pipe the batter into the prepared donut pan, filling each cavity about 2/3 full to allow for rising.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Prepare Coating: In a small bowl, combine the 1/4 cup granulated sugar and 1 teaspoon ground cinnamon for the coating.

Coat Donuts: Once the donuts have cooled slightly, dip each one in the cinnamon-sugar mixture, making sure to coat all sides.

Serve: Serve warm or at room temperature. Enjoy these delicious apple cider donuts with a cup of coffee or your favorite warm beverage!
