1 cup apple cider

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/4 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a donut pan with cooking spray or softened butter.

    In a small saucepan, bring the apple cider to a boil over medium-high heat. Reduce the heat and let it simmer for about 10-15 minutes until it reduces to about 1/3 cup. Remove from heat and let cool slightly.

      In a large mixing bowl, combine the granulated sugar, brown sugar, melted butter, egg, vanilla extract, and the reduced apple cider. Whisk until everything is well incorporated.

        In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

          Gradually add the dry ingredients to the wet mixture and stir until just combined; do not overmix. The batter will be thick but smooth.

            Using a piping bag or a zip-top bag with the corner snipped off, fill each donut mold about 2/3 full with the batter.

              Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

                While the donuts are baking, mix together the granulated sugar and cinnamon in a shallow bowl for coating.

                  Once baked, let the donuts cool in the pan for 5 minutes before transferring them to a wire rack.

                    While still warm, dip the tops of each donut in the cinnamon-sugar mixture to coat them generously.

                      Allow to cool slightly before serving. Enjoy your delicious, baked apple cider donuts!
