Instant Pot Chicken Fried Rice

This easy recipe features tender diced chicken, colorful peas and carrots, and fluffy jasmine rice, all infused with garlic, ginger, and a splash of soy sauce. Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

1 lb chicken breast, diced

1 cup frozen peas and carrots mix

3 green onions, sliced (white and green parts separated)

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

3 large eggs, lightly beaten

1 teaspoon ground ginger

Salt and pepper to taste

Optional: sesame seeds and additional green onions for garnish

Instructions
 

Prep the Chicken: Season the diced chicken breast with salt, pepper, and ground ginger.

    Sauté: Set your Instant Pot to the 'Sauté' mode. Add vegetable oil. Once hot, add the chicken pieces and cook until no longer pink, about 5-7 minutes. Remove the chicken and set aside.

      Cook Aromatics: In the same pot, add garlic and the white parts of green onions. Sauté for 1-2 minutes until fragrant.

        Scramble Eggs: Push the garlic and onions to one side of the pot. Pour in the beaten eggs and scramble until fully cooked. Mix with the aromatics.

          Combine Ingredients: Add back the cooked chicken, frozen peas and carrots, and cooked rice to the pot. Pour in the soy sauce and sesame oil, stirring well to combine all ingredients.

            Pressure Cook: Close the lid of the Instant Pot, sealing the vent. Set it to 'Manual' or 'Pressure Cook' on high for 3 minutes.

              Quick Release: Once cooking is done, perform a quick release to release the steam. Carefully unlock and open the lid.

                Finish: Gently stir the rice mixture, scraping the bottom to avoid sticking. Adjust the seasoning with extra soy sauce if needed. Sprinkle in the green parts of the green onions.
