1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons unsalted butter, melted

1/2 teaspoon vanilla extract

1/3 cup mini chocolate chips

1/3 cup mini marshmallows

1/4 cup crushed graham crackers plus more for topping

Optional: chocolate syrup for drizzling

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until combined.

    In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract until well blended.

      Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

        Fold in the mini chocolate chips, mini marshmallows, and crushed graham crackers.

          Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.

            For each pancake, pour about 1/4 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

              Carefully flip the pancake and cook for an additional 2-3 minutes on the other side, until golden brown.

                Repeat with the remaining batter, greasing the skillet as needed.
