Ingredients

1 cup fresh or frozen fruit (strawberries, blueberries, raspberries, or peaches)

2 tablespoons honey or maple syrup (adjust based on your fruit's sweetness)

2 tablespoons chia seeds

1 tablespoon lemon juice

A pinch of salt (optional)

Instructions

Prepare the Fruit: If using fresh fruit, wash and chop it into small pieces. If using frozen, thaw it slightly for easier blending.

Cook the Fruit: In a small saucepan over medium heat, combine the fruit and honey or maple syrup. Cook for about 5-8 minutes, stirring occasionally, until the fruit breaks down and releases its juices.

Mash the Mixture: Once the fruit is softened, use a fork or a potato masher to mash it to your desired level of smoothness, whether you prefer chunky or smooth jam.

Add Chia and Flavor: Stir in the chia seeds, lemon juice, and a pinch of salt (if using) until well combined. The chia seeds will help thicken the mixture as it cools.

Cool the Jam: Remove the saucepan from heat and let the jam sit for about 10-15 minutes to let the chia seeds absorb some liquid and thicken the jam.

Transfer and Store: Pour the chia jam into a clean jar or airtight container. Allow it to cool completely before sealing the lid. Store in the refrigerator for up to two weeks.

Enjoy Your Jam: Spread this delectable chia jam on toast, swirl it into yogurt, or use it as a topping for oatmeal or pancakes!
