Ingredients

1 lb fresh salmon fillet, skin off and cut into bite-sized cubes

1/4 cup hot honey (store-bought or homemade)

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh lemon juice

2 tablespoons chopped fresh cilantro (for garnish)

Lemon wedges (for serving)

Instructions

Marinate the Salmon: In a large mixing bowl, combine the hot honey, soy sauce, olive oil, garlic powder, smoked paprika, salt, pepper, and lemon juice. Stir well to create a marinade.

Add Salmon: Gently add the cubed salmon to the marinade, ensuring each piece is well-coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

Preheat the Cooker: Preheat your grill or a grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.

Cook the Salmon Bites: Once hot, carefully place the marinated salmon cubes on the grill or in the pan. Cook for about 2-3 minutes per side, or until the salmon is opaque and flakes easily with a fork.

Prepare for Serving: Remove the bites from the heat and arrange them on a serving platter. Drizzle with any remaining marinade if desired and garnish with chopped cilantro.

Serve: Serve the hot honey salmon bites with lemon wedges on the side to squeeze over just before enjoying.
