Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

1 pound chicken tenders

Salt and pepper, to taste

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 cup hot honey (store-bought or homemade)

Fresh cilantro or parsley, for garnish (optional)

Pickles (optional, for garnish)

Instructions

Preheat your oven to 425°F (220°C).

Make the Biscuit Dough: In a large bowl, whisk together the flour, baking powder, salt, and baking soda. Add the cold cubed butter and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs. Gradually pour in the buttermilk, stirring until just combined. Do not overmix.

Shape and Bake the Biscuits: Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat it into a rectangle about 1-inch thick. Cut out circles using a biscuit cutter or a glass, reforming and rerolling the scraps if necessary. Place the biscuits on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until golden brown.

Prepare the Chicken: While the biscuits are baking, season the chicken tenders with salt, pepper, paprika, and garlic powder. In a skillet over medium-high heat, add a tablespoon of oil. Once hot, add the chicken tenders and cook for about 6-8 minutes, flipping halfway, until they are golden and cooked through. Remove from heat.

Drizzle with Hot Honey: Once the chicken is cooked, drizzle it generously with hot honey, ensuring each piece is well-coated.

Assemble the Biscuits: Split the biscuits in half and place a chicken tender on the bottom half of each biscuit. Drizzle more hot honey if desired, then top with the other half of the biscuit.

Garnish and Serve: Optional: Garnish with fresh cilantro or parsley and add pickles for an extra tangy crunch. Serve warm!
