Honey-Poached Pear Yogurt Bowl

Ingredients
  

2 ripe pears, peeled, halved, and cored

1 cup water

1/2 cup honey

1 tablespoon lemon juice

1 teaspoon vanilla extract

2 cups Greek yogurt

1/4 teaspoon ground cinnamon (optional)

1/4 cup granola for topping

Fresh mint leaves for garnish (optional)

Instructions
 

In a medium saucepan, combine the water and honey over medium heat. Stir until the honey is dissolved.

    Add the lemon juice and vanilla extract to the honey-water mixture, and mix well.

      Gently place the pear halves into the saucepan. Cover and simmer for about 15-20 minutes, or until the pears are tender but still hold their shape.

        Once cooked, remove the pears from the pot and let them cool slightly. Reserve the poaching liquid by straining it through a fine mesh sieve.

          In a serving bowl, spoon a generous portion of Greek yogurt.

            Slice the poached pears and arrange them on top of the yogurt.

              Drizzle some of the reserved poaching liquid over the pears and yogurt for added sweetness and flavor.

                Sprinkle ground cinnamon over the bowl if desired, and top with granola for a nice crunch.

                  Garnish with fresh mint leaves for a pop of color and freshness.
