Honey Lime Chicken & Avocado Rice Stack

Ingredients
  

For the Honey Lime Chicken:

2 boneless, skinless chicken breasts

1/4 cup honey

Zest and juice of 2 limes

2 cloves garlic, minced

1/2 teaspoon chili powder

Salt and pepper to taste

1 tablespoon olive oil

For the Avocado Rice:

1 cup jasmine rice

2 cups chicken or vegetable broth

1 ripe avocado, mashed

1/4 cup chopped fresh cilantro

Juice of 1 lime

Salt to taste

For Assembly:

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

Fresh lime wedges for garnish

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine honey, lime zest, lime juice, minced garlic, chili powder, salt, and pepper.

      - Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes (or up to overnight in the refrigerator).

          - Rinse jasmine rice under cold water until the water runs clear.

            - In a medium saucepan, combine rinsed rice and chicken broth. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes or until the rice is tender and liquid is absorbed.

              - Once cooked, fluff the rice with a fork and mix in the mashed avocado, chopped cilantro, lime juice, and salt. Set aside.

                Cook the Chicken:

                  - Heat olive oil in a large skillet over medium heat. Remove chicken from marinade and cook for 6-7 minutes on each side until fully cooked through and golden brown (internal temperature should reach 165°F/75°C).

                    - Remove from the skillet, let rest for a few minutes, then slice into strips.
