Homemade BBQ Chip Chicken Nuggets

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup BBQ sauce (your choice of flavor)

1 cup potato chips, finely crushed (choose a flavor that complements BBQ, like classic or sweet barbecue)

1 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Prepare Your Ingredients: Preheat your oven to 400°F (200°C). Set out three bowls for your breading station; one for flour, one for beaten eggs, and one for the crushed potato chips.

    Season the Flour: In the bowl with the flour, mix in garlic powder, onion powder, smoked paprika, salt, and pepper.

      Coat the Chicken: Take a piece of chicken and coat it in the seasoned flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off, then roll it in the crushed potato chips until fully coated. Place the coated nugget on a baking sheet lined with parchment paper. Repeat until all the chicken pieces are coated.

        Bake the Nuggets: Once all the nuggets are on the baking sheet, spray them lightly with cooking spray or drizzle with a bit of olive oil to help them crisp up. Bake in the preheated oven for 15-20 minutes, turning halfway through, until golden and cooked through (internal temperature should reach 165°F or 75°C).
